I mean in order to avoid overcharge and over current, what is the best throttle for flying ? Is 80% the best choice?

You need to be more specific : Type of equipment, type of flying , duration , battery , etc etc , drainage of your setup ..... to detect over current you need to first test your setup with a wattmeter .
