Just wanna know......How is the battery information coming in the video. in one of the video i saw the altitude also. how it is done???
check that out........camera is with Pan & Tilt system....

The Plane is able to balance itself steadily with nose downwards.In this case the prop and the gravity are both acting in the same downward direction.. Then how is it that the plane does not move downward.....
Does the prop move in the Opposite direction as well?

This i think is a Variable Pitch Propeller Setup, in which the pitch of the propeller can be change to give a reverse thrust (controlled by a servo),  similar to what Heli tail rotor use.

There are many "loggers" out there that can log electrical and other data during the flight.  Eagle-tree (www.eagletreesystems.com) is one company well known for that.

Correct.  There are other threads here about VPP, just search for it. 

BTW, the heli main rotors also work the same way, and that is what allows RC helis to hover inverted.  The pitch angle can be varied from positive to negative.
