I am using a 2200mah 30c 3 cell pack on my quad and it gives me about 14 mins of flight time.
I was wondering if I could get even more flight time by bumping up the C rating, maybe a 60c 2200mah battery.

I am not sure about the technical stuff, so please enlighten me.

C rating does not relates with higher flying time. For getting more flight time you need to go for higher mAh rating.

Ya but if I use a 3000 mah battery, the flight time goes down by 1 minute because I am using more throttle to keep the quad flying.

Yeah it is so because of the increased weight. 3000mAh is heavier than 2200mAh.
