Servos in quadcopter. why.????

Hello, I'm making a quadcopter and i came around some videos on youtube wherein servo motor are used for tilting quadcopters.
May i know why servos are used.? And whats the basic difference between flying with and without servos.?

My quadcopter setup:
Sk 450mm HK Frame
D2836/8 motor
ESC 300 Amps ESC, will flash simonk Firmware
10" L/R Rotation prop
kk2.1V flight board
Futaba 7ch fast TX and RX

you can build and fly a quadcopter even without using any servo... Servos are used sometimes just for much easy yaw and pitch controls. But even without servos too quadcopters do fly.
