appears to be 1080p at 60 fps and further slowed with video editing app or might be 720p at 120 fps too

It was filmed in 1080p 60fps. Only a few shots have more slow motion with Twixtor.

Stunning capture, haven't seen anything like this before. Which aircraft model was used as the camera plane?

Seems like a model with a fixed nose wheel.
