I think they are controlling each engine separately. The video shows the guy notifying someone before each one is started. So one person might be controlling the engines, and the other guy might be doing the flying (i.e. control surfaces).
Whatz the transmitter they are having?? Seems like the antenna can whack on their face.
Lot of big toys folks use the "tray" versions of transmitters, or just keep their regular transmitters on trays (like Rao does ;D ).
The Futaba FX-30 is one that I have seen people use.
The plane sounds very much like a real one. Yes, looks like the engines were being controlled by either pilot - only one guy was really controlling the plane though.

Sir, I read somewhere that one is flying the plane only and other is controlling things like landing gear, flaps, lights etc. So the flier can concentrate only on flying instead of worrying about other things.
